Remixing a family tradition: Korean sweet potatoes with walnuts & banana maple syrup

Every winter, my family ends up buying a bunch of Korean sweet potatoes. They’re halfway between American sweet potatoes and yams. Anyhow, you wrap them in aluminum foil and stick them in a conventional oven for an hour. It’s nice, but my (spoiled) younger cousins who were born and raised in Manhattan won’t touch them because they look strange.

So, at the behest of my family, I tried to figure out a way to get my cousins to reconsider their sweet potato choices. Post-cooking, I peeled and sliced the sweet potatoes, and coated them with a banana maple syrup (mash a ripe banana, put it in a pan with some maple syrup, mix it for like three minutes), and stuck some walnuts on the side of the plate. Voila.
